Grilled Peach Salad
with Mixed Greens
As peaches start hitting their peak here in Sacramento, we’ve got the perfect way to enjoy one of summer’s best flavors. At Sacramento Massage Studio, we love sharing little ways to nourish your body beyond the treatment room. This Grilled Peach Salad is fresh, vibrant, and super easy to throw together.
If you already have the grill fired up, toss on a few peaches. Just a few minutes of heat transforms them into something juicy and caramelized that takes your salad game up a notch.
Ingredients:
- 3 ripe peaches, halved and pitted
- 6 cups mixed salad greens (we love a mix that includes arugula)
- 1/2 cup mini mozzarella balls
- 1/4 cup sliced almonds, toasted
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 tablespoon chopped chives
- Salt and freshly cracked pepper, to taste
Instructions:
- Grill the Peaches:
Preheat your grill to medium-high. Lightly brush the peach halves with olive oil and place them cut side down. Grill for 3–4 minutes, or until they have nice grill marks and are slightly softened. Let cool a bit, then slice. - Prep the Salad:
In a large bowl, combine the mixed greens, mozzarella balls, and toasted almonds. Add the grilled peach slices on top. - Make the Dressing:
Whisk the olive oil, balsamic vinegar, honey, Dijon mustard, chives, salt, and pepper in a small bowl (or just shake it all up in a mason jar!). - Dress and Toss:
Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
